Urad Dal(Vigna Mumgo), is small white split lentil. Not very frequently used.

 
Toor Dal(Pigeon Pea) most frequently used of all the dals.

 
Moong Dal(Mung Bean) small yellow split lentil. Used to make crushed lentil soup.

 
Chana Dal(Split Chickpeas) different than Toor Dal. They are thicker.

Hing (Asafoetida) is good for digestion. Used when tempering or seasoning lentil curry. Little goes a long way with this.
